Observation:
- Heavy grease built up on the floor of the dishwasher pit and the flat-top grill, the shleves, the table and the filters of the vent hood system.
Corrective Action(s): - Thoroughly clean the aformentioned areas.
- Make a rouitne deep cleaning schedule.

Observation (CORRECTED DURING INSPECTION):
- Quats sanitizer not tested at required concentration set by Ecolab.
Corrective Action(s): - Call for service. Make sure sanitizer works effectively and dispenser works consistently.
- Switch to 100ppm bleach solution to sanitize the food contact surfaces.

- Unused items stored at the back corner room, on the shelf / table and dishwasher pit area.

Comments

Routine inspection conducted with the presence of 4 staff. Service provides brunch.

- Handsinks in the kitchen and front service area, and washroom fully equipped with liquid soap, hot and cold running water, and paper towels.
- Coolers (prep. cooler, white domestic cooler and upright coolers) were at or below 4 degrees C.
- Freezers were at or below -18 degrees C.
- No hot holding at time of inspection.
- QUATS sanitizer in the spray bottles and from the dispenser concentration not adequate for sanitizing purpose.See code.
- Dishwasher final rinse chlorine sanitizer residual was at least 100 ppm at the plate level.
- Back door sealed tight. No signs of recent pest activity observed during inspection.

Note: Remind staff to wash their hands whenever hands are contaminated (after touching dirty items, before returning to handle food etc.)
