Clean underneath shelves of walk-in cooler. Ensure to follow your sanitation plan's cleaning schedule for cleaning inside coolers and freezers. To be corrected starting today.

Routine Inspection:
Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
All temperatures met health requirements:
- Coolers maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
- Freezers maintained at or below -18 degrees Celsius (0 degrees Fahrenheit).
- Hot holding maintained at or above 60 degrees Celsius (140 degrees Fahrenheit).
3-compartment sink used for manual warewashing.
QUAT sanitizer at 3-compartment sink dispenser = 200 ppm.
QUAT sanitizer in spray bottle = 200 ppm.
Temperature, sanitation and sushi logs well maintained.
General food storage practices satisfactory:
- Food items covered and protected from contamination.
- Food items stored at least 6 inches off the floor.
- All food items properly labeled and organized.
No signs of pest activity at the time of inspection.
NOTE: one under-counter cooler has been out of service for close to a year. No food items are stored in this cooler at the time of inspection.
