Observation (CORRECTED DURING INSPECTION):
- Cheese tarts in hot holding unit measured 54 degrees C
- Buns in hotholding unit measured 53 degrees C
- When operator was asked what the minimum temperature for hot holding was, she claimed it's 40 degrees C.

- All hot potentially hazardous foods must be stored at 60 degrees or above.
- Items above were freshly made at the time of inspection, so the units were increased to maintain these items at 60 degrees C or above.

Observation (CORRECTED DURING INSPECTION):
- Staff was washing dishes at the time of inspection. 3-compartment sink was not properly set-up and no sanitizer was present. Operator was asked to demonstrate proper manual dishwashing steps. ---> operator not able to set up properly and only filled up the sink 1/4 way up.

- Water must be filled up to the top so that all utensils are fully soaked in the sanitizer.
---> mix 6 cups of chlorine solution with water filled up to the top.
---> sanitize for at least 30 seconds, then airdry.
---> Ensure to train every staff to properly wash and sanitize dishes/ utensils.
