206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)] Observation (CORRECTED DURING INSPECTION): Samosas were stored in the hot holding unit at 55C. Staff have not been using time tracking to determine how long the food has been stored between 4C to 60C. Corrective Action(s): Hot potentially hazardous foods cannot be stored between 4C to 60C for more than 2 hours to prevent the growth of pathogens and or the formation of toxins. Items which are between 4C and 60C for which there is no time tracking must be discarded - 23 samosas were discarded at the time of inspection. Violation Score: 15

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19] Observation (CORRECTED DURING INSPECTION): 4 used corrugated plastic trays were found on-site. Trays either had cut marks or sticky residue on them. Corrective Action(s): These items cannot be properly cleaned and sanitized after each use and are not intended for multiple use. Trays were discarded at the time of inspection. Violation Score: 9 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Paper towel dispenser has not been affixed to the wall by the handwash station. Paper towel dispenser is placed on top of the oven. This is a continued violation. Corrective Action(s): Single use paper towel dispenser must be mounted to the wall by the handwash station and must be easily accessible to facilitate proper handwashing. Continued non-compliance will result in the issuance of a violation ticket. Correction date: 1 week Violation Score: 9 309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27] Observation: 2 spray bottles of water were unlabelled. Contents appear similar in colour as bleach sanitizer. Corrective Action(s): Ensure all spray bottles are properly labelled to prevent accidental mixing or misuse of chemicals. Violation Score: 3

-Both display coolers were less than 4C. -Upright cooler (metal) was at 4C. -Glass door cooler was at 4C. -Upright cooler (customer area) was at 2C. -Chest freezer was at -33C. -Freezer (customer area) was at -18C. -Cleaning and sanitizing carried out in 3-compartment sink at the end of the night. Sink plugs and bleach available on-site -Bleach sanitizer tested at 200ppm. -Foods properly stored off the floor and covered. -General sanitation satisfactory at the time of inspection. -No signs of pests noted at the time of inspection. -Please contact the inspector if you have any questions or concerns.
