Observation (CORRECTED DURING INSPECTION): Rice is being cooked and cooled and then transfered to a warmer. Rice had been in warmer for a couple of hours and was only 53 degrees C.
Corrective Action(s): Rice must be reheated to 74 degrees C within 2 hours and then can be hot held at 60 degrees C. Change practices immediately. Do not overload rice warmer with rice. Ensure it is reheated prior to placing in warmer.

Comments

All fridges are maintaining foods at 4 degrees C or colder. Do not place inserts on top of other inserts on the line cooler.
Walk in cooler very organized. Ensure all foods are stored covered in walk in cooler.
Upright freezers and chest freezer are -18 degrees C or colder.
Liquid soap and paper towel at handsinks.
Dishwasher had a 50 PPM chlorine residual at the plate surface during final rinse.
Note: Buffet not in use at time of inspection.
Containers used in fridge have been replaced with food grade containers.
Replace bulbs in uv fly traps as they are burnt out.
