Observation: Fruit flies and flies observed near the bar station where the waste sink is. Cleaning is required at this station more frequently to prevent attracting fruit flies. Food products such as bottle liquor and sliced fruit in this area will have to be covered to prevent attracting pests.
Corrective Action(s): Clean and and sanitize this work station frequently to prevent accumulation of fruit flies. Cover any open food products to prevent contamination and attracting more flies. Contact pest control if further pest reduction action is required. Correction required this week.

Premise in general is sanitary.
Hot and cold water available.
Dedicated hand sinks with liquid soap and paper towels available.
Staff demonstrate good personal hygiene and sanitary hand washing.
Dishwasher washes hands adequately between dirty and clean dishes to prevent cross contamination - good.
Washrooms are sanitary with fully stocked hand sinks.
Food is from an approved source.
Coolers are at 4C and below. Freezers are at -18C and below.
Hot holding units are at 60C and above soups and gravy.
Ice machines are sanitary with dedicated hand scoop. Only one in use at the time of inspection.
Temporary condiments are cold held in ice and used up in two hours. Food products are date and time stamped.
Temperature holding is adequate and in use with accurate thermometers and logs.
Take out containers and utensils are sanitary.
Quat sanitizer in use at 200 ppm in spray bottles. All chemical sanitizers and cleaners are adequately labelled.
Dishwasher final rinse at 100 ppm chlorine at the plate.
Glass washer final rinse at 100 ppm chorine at the plate.
Permit posted at front of the house.

Recommendation: Fumehood fan cleaning is due for service in November. There is minor grease build up along the canopy edges above food storage. Ensure these areas are cleaned daily too to prevent food contamination from dripping grease. Also, clean dust build up near ceiling fans in kitchen as per cleaning schedule.
