Observation: Main meat prep cooler measured 12 - 14 C in inserts and at base. Not holding temperature. Toppings prep cooler is ok.
Correction: Immediately place meat inserts on ice or keep in alternate cooler to ensure they keep food below 4 C. Have unit looked at and serviced by technician. Keep records of cooler temperatures. This should be ongoing, not just because of issues noted with this cooling unit.
Temperatures will be reviewed at follow up inspection date noted on report.

Prep cooler unit serviced and unit measuring better. Less than 4 C. It is advisable to keep the lid of this unit closed as much as possible to reduce the workload of the compressor and coolant.
