Observation: Observed a few knives in the knife holder was not maintained in sanitary condition. Can opener attached to a working table in the back had visible food and grease residue accumulation
Corrective Action(s): Required operator to clean and sanitize all of the items above and make sure that once used, proper cleaning and sanitizing is done each time.

303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: Hot water tank failed in the morning of March 18th 2019 according to the operator. No hot water is being provided for hand washing, proper sanitizing, and cleaning at the time of inspection. Informed the operator that in order for a food premises to operate, hot and cold water is an imperative condition that operator must meet in any circumstances. Once operator found out, he proactively contacted a technician for repair/replacement.
Corrective Action(s): Operator must repair/replace hot water tank to provide hot water for proper hand washing, proper sanitizing of surfaces, dishes and utensils, and cleaning of the premises. Closure order issued until hot water tank can be fixed to a good working order.

Observation (CORRECTED DURING INSPECTION): Observed newspaper being lined on a wooden block cutting board for food prep. Operator stated that it facilitates easier cleaning as they were dealing with flour. This practise must be stopped immediately. Newspaper is not a suitable material for any type of food contact surfaces.
Corrective Action(s): Required operator to remove newspaper, clean and sanitize all surfaces around the area prior to re-use.

Low temperature dishwasher on site and in use; as hot water was not available to bring the temperature up to the minimum requirement, chlorine residual check was not performed. Once hot water tank is repaired/replaced, check will be done to confirm that it is in good working order
All coolers at 4 C or lower; all freezers at -18 C or lower; all hot holding units at 60 C or higher
Adequate cooling procedures noted at the time of inspection; thawing in cooler, using ice to quicken the cooling process for cooked chicken
No sign of pests noted at the time of inspection.
