Observation (CORRECTED DURING INSPECTION): During time of inspection, Three 5 gallon containers of butter chicken sauce was probed at 8.7-8.9C
-Operator informed they were prepared the previous day
-Adultered with QUAT solution and to be discarded during time of inspection
Corrective Action(s): -Ensure that all foods prepared in the facility are cooled properly to avoid foodborne illness caused by improper cooling
-Operator informed that ice wands will be purchased
-Probe thermometers should be used as well

Observation: During time of inspection, the following was observed:
- concentration of droppings located underneath tiled hole by dishwasher
- droppings apparent in office storage area located within kitchen facility
- droppings located underneath handwashing station on second shelf
- droppings located in electrical room
- droppings located around dough mixer in facility
Corrective Action(s): - Must remove all droppings
- Must clean and sanitize all areas where droppings were located
- Must continue to monitor for pests on a regular basis, use flashlight, check in hard to reach areas and areas that are warm/moist
- Work with pest control operator

Observation: During time of inspection, found potential entry point for rodents where water was plumbed in for dishwasher

Facility not in operation during time of inspection
- All handwashing stations equipped with hot/cold running water, liquid soap and paper towels
*Walk in cooler at 4C
*Walk in freezer at -18C
- QUAT sanitizer available, concentration of sanitizer at 200ppm
- All foods stored at least 6" off the floor
- High temperature dishwasher available at facility, adequate sanitization temperature reached via hot water (75.5C)
NOTE: Ensure all staff is aware that dishwasher must be warmed up to temperature before use
- Most foods kept covered in facility, ensure to cover all foods
- Facility employs PCO (pest control operator) on monthly basis, ensure to apply more control measures as needed
- 2 tin cats, 1 mechanical trap checked, no captures
