305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation:
There is an open hole in the wall and floor junction, in the dry storage area under the racks storing canned soup. There are a few rodent droppings and gnawed material around the hole. This is indicating rodents are entering the premises through the hole. Rodents carry diseases.
Corrective Action(s):
Immediately block and seal the hole with a metal plate, wire mesh (1/4" or smaller), or tightly stuff with steel wool and then seal sith expanding foam. Clean up the droppings and sanitize surfaces that have come into contact with the droppings.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) The exhaust canopy filters have accumulated grease and dust on them. Staff indicate that these are cleaned by the professional company every 6 months. The accumulation of grease is a fire hazard and it will attract pests.

2) There are food stains on walls behind and below work tables. This will attract pests.
Corrective Action(s):
1) Immediately wash and sanitize the exhaust canopy and filters. Add this duty to the cleaning schedule, so it is done on a regular basis (monthly). Provide the necessary time and equipment needed to wash and sanitize them safely and properly.

2) Wash and sanitize the walls below and behind work tables. Add this duty to the cleaning schedule so it is done on a regular basis (weekly).

Observation:
Dishwasher is constantly dripping water under the machine. Water is pooling under the dishwasher and this will breed flies and attract mice (water source).
Corrective Action(s):
Call a company to repair the dishwasher so it doesn't drip or leak water onto the floor.

Observation:
There are missing wall tiles and window frame beside the dishwasher. The exposed drywall is unsealed and not cleanable. This will attract pests.
Corrective Action(s):
Repair the wall and window frame so the surfaces are durable, level, smooth, sealed and cleanable.

Comments

A routine inspection completed:
- Walk-in-cooler 0C, upright reach in cooler 4C; rack cooler 4C; walk-in-freezer -21C; hot holding units above 60C; thermometers present; and temps recorded daily.
- High temperature dishwasher rinse cycle was 81.4C at the plate's surface as per max/min thermometer. The wash and rinse temperature gauges accurately showing the temperatures.
- Quats sanitizer was 200ppm in the spray bottles.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate from RTE foods; and foods stored 6" off the floor on racks and shelves.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. Improvement needed in the mentioned areas.
- Exhaust canopy and filters were professionally cleaned and service in June 2024. Next service is due in December 2024. Cleaning of the canopy and filters MUST be done by the premises, in-between professional cleanings.
- Professional pest company contracted to service facility twice a month. Orkin Pest Company.
- All staff possess a valid FoodSafe Level 1 certificate.
- Valid health permit and decal posted.
- Floor in the dry storage areas and in front of the walk-in-cooler and freezer, and the floor in the walk-in-cooler has been resealed and painted. Good job.
- The sink and drain pipe, for rinsing of dirty dishes, no longer leaks.
- Tight fitting lids found for all garbage cans.
- Door guards installed on base of doors leading out of the kitchen area to prevent entry of pests.
- All white storage bins, storing dry ingredients, have tight fitting lids that are in good repair.
- All bait boxes have been removed and catch-all-traps are present, good. Only use mechanical means to rid of rodents.

ACTION
Clean the exhaust canopy and filters. Add this to the cleaning schedule so it is done on a regular basis (monthly), in-between professional cleanings.
Clean the walls below and behind prep tables. Add this to the cleaning schedule so it is done on a regular basis (weekly).
Block the hole in the wall, in the dry foods area under the rack storing canned soaps.
Maintenance/repair the dishwasher as it is constantly dripping/leaking water under it.
Repair the wall tiles and window frame beside the dishwasher.
