304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings noted in storage area behind the front counter underneath the display cooler unit and underneath shelving.
Corrective Action(s): Remove rodent droppings with 1 part bleach, 9 parts water. Ensure that rodent droppings are saturated for 10-15 minutes, then removed while wet. Continue to monitor for rodent activity and any structural deficiencies (e.g. holes, crevices).

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: 1) Hot-holding unit equiped with an oven-type thermometer that does not measure below 150F.
2) Display cooler with the Christmas ornaments is missing a functional thermometer.
Corrective Action(s): Ensure that all coolers and hot-holders are stocked with a thermometer designated to measure the appropriate ambient temperature of the unit.

Comments

Routine inspection conducted. Facility is generally maintained in good sanitary condition. The following was noted at time of inspection:

1. Temperatures
- Walk-in cooler at 2C
- Deli display coolers and ready-to-eat display cooler varies from 3-4C
- Cooler inserts for sandwiches maintains 3C
- Undercounter stainless steel cooler units at 2C
- Sushi reach-in display cooler units at 4C
- Pre-packaged deli display units at 4C
- Hot-holder cabinets at an ambient temperature of 63C
- Hot-held soup at 70C or greater
- Stand-up freezer units at back-of-house at -19C
- Temperature logs maintained and up-to-date

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizer spray bottles present and measured at 200 ppm quaternary ammonium compound (QUATS)
- Sanitizer dispenser releases 200 ppm QUATS at back-of-house
- 3-compartment sink equipped with drain plugs for washing, rinsing, and sanitizing
- High-temperature dishwasher sanitizes at a final rinse cycle of 74C at the plate (186F at the manifold)
- Knives and equipment generally stored in good sanitary condition
- Ventilation canopy maintained in good sanitary condition

3. Storage
- Food products stored at least 6" off the floor. NOTE: One crate filled with pre-packaged items was on the floor - an empty crate was placed underneath it to provide 6" of clearance
- Raw products stored separately from cooked and ready-to-eat foods
- Products in walk-in cooler and in prep cooler units are covered with lids

4. Pest Management
- Professional pest control company arrives once a week. Last inspection conducted on December 13th, 2019, revealed no visible signs of rodent activity
- Please see notes above concerning droppings

5. Administrative
- General manager and deli manager trained with FoodWise (FoodSafe 1 equivalent) and were within expiry dates
- Cooking, hot-holding records are complete and maintained weekly

Follow-up inspection will be conducted to assess general sanitation, rodent activity, and thermometers.
