Routine inspection of the store which includes dry food sections, dairy, produce, meats/seafood and bakery sections.

Following items require addressing:

. Meats/Seafood:
-Whitish build up ( calcium build up??) noticed on Hobart meat tenderizing machine.
Clean and/or remove the build up by using a de-liming solution followed by rinsing.
- Clean dust build-up around lighting fixtures on the ceiling of the meats walk-in cooler.
Bakery:
-Clean the hand sink and area around the hand sink. ( March 17, 2019)
-Clean food debris or dirt build-up in the floor drains ( especially near the baker's table) ( March 17, 2019)
-Clean floor underneath the cabinets in the cake decorating area ( By March 17, 2019).
-Tube lights near the back entrance to the bakery section require shields/covers.
-Please forward a copy of the latest inspection report from the pest control provider.

Water dispensing station:
-Please forward the cleaning/sanitizing instructions for the water dispensing equipment ( By March 20, 2019).

* Please ensure that all new LED light bulbs to be installed in the coolers or freezers or other food display units are of
"Shatter-proof" type.

General observations:

The floor drains in bakery section are now covered. Good.
Liquid soap and paper towels available at all hand washing stations.
Cake display coolers < 4 C
Cake display freezers < 4 C.
Meats/seafood front display cooler < 4 C.
All other display coolers below 4 C.
All display freezers throughout the store registered -18 C or below.
Quats dispensing stations tested @ 200 ppm quats sanitizer.
Spray bottles of Quats sanitizer solution tested 200 ppm.
Produce walk-in cooler < 4 C.
Produce display coolers < 4 C
Dairy section walk-in cooler below 4 C.
Cooler temperatures are monitored twice a day.
General sanitation is satisfactory.
