209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Couple bins of chicken wings found unopened and stored on floor, and a couple containers of proteins found uncovered on the racks in walkin cooler.
2. Flour bin cover is broken, there are cracks and holes on the cover.
Corrective actions:
1. Foods need to be covered to prevent cross contamination. If cooling in cooler, cover with a thin layer of plastic wrap or parchment paper to allow air flow while protecting food from contaminants.
2. Replace flour bin cover so particles/plastic won't accidentally get inside the bin, and contaminate flour.

Observation: There is a gap between the back door at the keg/beer cooler area and the frame. These could create potential entry point for pests.
Corrective actions: Seal the back door so there is no gaps for potential pest entry.

Observation: 1. in kitchen: debris found on the floor at back storage area, under shelvings at the back storage area, behind chest freezer, beside flour bin.
2. in kitchen: Some food debris build ups on surfaces of coolers and freezers, and underneath the handles, and on the walls.
3. in bar: Drink dispenser heads were found sticky.
Corrective actions: Thoroughly clean and sanitize the areas mentioned above. Ensure to pay extra attentions to hard to reach areas during daily cleaning.

Other observations:
- Hand wash stations had soap and paper towel, hot + cold running water.
- All fridges @ < 4 degrees Celsius, all freezers <-18 degrees Celsius. Temperature logs available.
- Hot holding @ >60 degrees Celsius
- Quats sanitizer in spray bottles @ 200 ppm. *When filling out sanitizer @ dispenser, ensure to run dispenser for 5-10 sec. to allow solution to get to the correct concentration.
- Exhaust canopy is clean, next service in July 2022.
- Raw food stored RTE foods, and labeled, follow FIFO.
- Ice machine is cleaned on a regular basis.
- low temp dishwasher had 100 ppm chlorine residual @ plate level
- glasswasher had 50 ppm chlorine residual at plate level.
- No signs of pests during inspection.
- FoodSafe trained staff on site.
