Observation (CORRECTED DURING INSPECTION): No chlorine (hypochlorite) was detected in one spray bottle identified as bleach water sanitizer. In another spray bottle, the concentration of chlorine exceeded 200 ppm.
Corrective Action(s): Bottles were emptied and refilled with bleach and water, then tested at 100 to 200 ppm chlorine. Ensure that at all times, sanitizer is available at concentrations required for effective sanitizing of food contact surfaces (e.g. 100 to 200 ppm chlorine).

Observation (CORRECTED DURING INSPECTION): Staff member observed drying hands using cloth located on counter. In addition, paper towels are not conveniently located for hand washing in back area.
Corrective Action(s): Hand washing practices reviewed at time of inspection. Paper towels placed near sink for hand washing. Ensure that proper hand washing procedures are always followed to limit potential contamination of food. Hands are to be dried with a single use method of hand drying only (paper towels). Ensure hand sinks are always fully supplied with hot and cold running water, liquid hand soap, and paper towels in order to facilitate proper hand washing.

Observation (CORRECTED DURING INSPECTION): Raw meat (beef, chicken) observed to be stored above vegetables (e.g. sprouts) in glass door cooler. Note: No leakage observed.
Corrective Action(s): Above-noted raw meats were moved to lowest area of cooler. Ensure that raw animal products such as chicken and beef are not stored above ready-to-eat foods to protect from potential contamination.

Observation: An accumulation of oil and debris observed throughout kitchen, particularly along floor-to-wall junctions, under equipment, in the dishwashing area, and in and around the cook line.
Corrective Action(s): Ensure above-noted areas are thoroughly cleaned and sanitized. Food debris and oil may potentially attract pest activity. Date to be corrected by: March 9, 2022.
