Observation: 1. REPEAT: Tool (hammer) stored with clean hand held can openers on shelf in preparation area.
2. REPEAT: Pots and pans stored on floor under stove
3. REPEAT: Stored clean cutting board observed between cupboard and reach in cooler in front area. Surface of cutting board resting on long-standing debris.
Corrective Action(s): To prevent cross contamination:
1. Store tools in separate location from food and food contact surfaces
2. All food contact surfaces (pots, pans) are to be stored at least 6 inches off the floor.
3. Cutting board is to be stored in a sanitary manner. Relocate cutting board to a storage area free of debris.

Observation: 1. REPEAT: Outside vent above back door observed with a build-up of grease that is dripping to side walk below.
2. REPEAT: Side walk outside back door observed a build-up of grease from vent above.
Corrective Action(s): Remove all grease from vent and side walk below to maintain the area in sanitary condition and prevent the attraction of pests.

Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: REPEAT: Tofu observed stored in metal bowl on top of inserts in top well of sandwich cooler. Internal temperature of Tofu observed at 21.5 C.
Correction: Tofu was discarded. To ensure foods are maintained at 4 C or below, food its to be stored inside inserts of sandwich cooler well to allow adequate chilling of the product. Food stored on top of inserts in cooler well will not receive adequate refrigeration.

Follow up Inspection conducted with student

- Critical violation from previous report #205 was corrected during inspection report CSWY-C43NDM. Violation not repeated during follow up.
- Cutting board was repaired/replaced from previous inspection
- Covid-19 recommendation for separating tables in dining room was observed

- PREVIOUS VIOLATIONS still outstanding from Routine are as follows:
- #305 - Screen door in back area observed with gap still needs replacing
- Repeat violations observed during follow up inspection
