Observation: - Damaged flooring tiles noted adjacent to mop sink and in dishwashing area under drain board.
Corrective Action(s): - Repair/replace flooring tiles in areas noted above so that floor remains in good repair with a smooth, washable finish. To be corrected by: 1 month

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: - Thermometer in 2 door undercounter cooler not reading temperature accurately. Temperature of unit was 3C and temperature on thermometer was 10C.
Note: Probe thermometer is used for temperature readings. Accurate thermometer is still required within unit.
Corrective Action(s): - Replace thermometer with one that is in good working order. To be corrected by: 16-Sept-2022

Comments

- Premises and equipment maintained in sanitary condition.
- Dry storage area organized with all food products stored on shelving.
- Handsink supplied with hot and cold water, liquid soap and paper towel.
- Observed frequent handwashing by foodhandling staff in addition to glove use for direct food contact.
- Coolers and freezer were operating at required temperatures (4C or colder; -18 or colder):
- Walk-in cooler 2C
- Sandwich line coolers 3C (veggie side) 3C (meat/protein side)
- 2 door cooler 3C
- Beverage cooler 4C
- Walk-in freezer -19C
- Hot potentially hazardous foods held at 60C or higher
- Soup 67C, 68C
- Meatballs 62C
- Temperatures monitored and recorded twice daily per food safety procedures. Records present and up to date.
- Quats sanitizer present from dispenser at 3 compartment sink, in spray bottle, and bucket with wiping cloth. Concentration of solutions measured 200ppm.
- Plugs present for sink compartments for sinks to be filled for manual warewashing steps.
- No signs of pest infestation noted at time of the inspection. Pest control contract in place with monthly service.
- Manager present and has completed Foodsafe level 1. Certificate valid until Aug 2023.
- Staff/public washrooms maintained with hot/cold running water, liquid soap and hand dryers.

Observation and required corrective actions reviewed with Manager and a copy of the report was provided.
