Observation (CORRECTED DURING INSPECTION): Wiping rags were stored directly on cutting board or food preparation surfaces. To prevent cross contamination, all wiping rags need to be stored in a sanitizing solution when they are not being used.

Observation (CORRECTED DURING INSPECTION): Dishware, utensils, and food equipment that were intended to be washed and sanitized were not sanitizing properly as low temperature dishwasher is not good working. 0ppm of chlorine was achieved during the final rinse cycle.

Observation: Washed bean sprouts stored in a straining basket and container was placed on the floor underneath the cooking unit. As mentioned on previous inspections, do not place any food products on the floor as this does not protect food from contamination.

Observation: Low temperature dishwasher not in good working order as 0ppm of chlorine was achieved after the final rinse cycle. Operator contacted the dishwasher service company at the time of inspection. Low temperature dishwasher must be in good working order by the end of today.

Broken tiles around the dish pit area have been replaced.
