Observation (CORRECTED DURING INSPECTION): Bleach solution used for surface sanitizing too strong (>1000 ppm). Bleach solution used to store wiping cloths too weak (<50 ppm).
Corrective Action(s): Use only 1/2 tsp of bleach per litre of water to make a sanitizer solution of 100-200 ppm chlorine.

Observation: Premises kept in a dirty condition. Walk-in cooler fans full of dust and pieces of raw meat on the floor. Spider webs seen near shelf by ice machine. Ice machine dirty (not used for food, only for cold holding).
Corrective Action(s): Deep clean entire premises so that all surface,walls, floors, and equipment are visibly clean. Correct by August 23, 2023.

Observation: Flooring in poor condition and not even throughout (some areas tile and then concrete). Floor drain cover missing. Wooden plank (by curtain strips) coming off the wall. Curtain strips are broken.
Corrective Action(s): Provide a plan on repairs by August 23,2023. Equipment and surfaces should be in good condition, smooth and impervious to moisture, and easy to clean.
