Observation (CORRECTED DURING INSPECTION): 1. Mechanical dishwasher not on at time of inspection. Owner confirmed that due to the breaker, the oven and dishwasher could not be turned on a the same time.
**Corrected during inspection** Owner stated they will relocate oven.
High temperature dishwasher must be on when restaurant is in operation.

2. Improper manual washing of dishware. Staff cleaned using soap and water only. No sanitizing step.
**Corrected during inspection** Inspector educated staff on importance of sanitizing equipment. Operator to follow-up education with remainder of staff

3. QUATS sanitizer in spray bottle measured 100ppm.
**Corrected during inspection** Bottle solution replaced with sanitizer fresh from dispenser.
Empty all chemicals (bleach and QUATS) at end of day to ensure fresh solution is made daily.

Observation: 1. Black garbage bag observed to be used to cover frozen products in chest freezer (Nestle).
2. Take out containers stored immediately next to handwashing station

Corrective Action(s): 1. Do not use black garbage bags to cover/store food, instead, use food-grade containers/bags to cover/store.

Observation: Upright freezer (New Air) measured to maintain temperatures of ~ -10.0°C while unit themostat is set to -21°C.
Unit observed to be overfilled and frozen products nearest the door were soft to the touch.
Corrective Action(s): a. Organize unit so there is proper air flow to circulate cold air in unit.
b. Educate staff to leave sufficient room for air circulation when stocking freezers.
c. If space is insufficient, consider reducing stock or obtaining more storage space if possible.
