302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): 1)Sanitizer dispenser was not dispensing any sanitizing chemical. On-site staff were not checking sanitizer strength. Obtain test strips and check sanitizer strength at least daily. Keep Records. Have sanitizer dispenser repaired and in the meantime mix your sanitizer manually. 2) Worker was observed washing tongs that had fallen on the floor. She was rinsing with sanitizer only; not soaking. A sinkful of sanitizer should be prepared and items being sanitized should always be soaked in sanitizer for at least two minutes. Corrective Action(s): Violation Score: 5

Premise is clean. No sign of pests. Fridges are all under 4 Celsius. Hot holding is well over 60 Celsius. Hand sink is stocked and working.
