- All handsinks are fully equipped. - All coolers at 4C or below. - Walk-in freezer at -18C or below. - Hot holding units at 60C or above. - Time tracking in practice for tempuras and onsen tamago - good. - Bleach sanitizer in spray bottle measured at 100ppm chlorine. - General sanitation maintained. - No signs of pest observed at the time of inspection. - Ice machine in sanitary condition. - Vent hood panels in sanitary condition. *Dust started to build up on the ceiling panels around the ceiling vent. Clean them. *Rodent trap observed with moisture and old/wet glue board. Ensure they are removed when wet cleaning the floor. Heavy debris build up observed in/around the traps. Replace the traps or clean them, and ensure fresh glue board is installed.
