Comments

On Follow-Up:
-Prep cooler is at 11 degC. Only pickled vegetables and kimchi are stored in this cooler. Move the kimchi into another cooler. Get the unit fixed. Don't store PHF's in the cooler until it has been fixed.
-Temperature log sheet is available. You need to check and record the cooler temperatures for every cooler on the logsheet once a day.
-200ppm bleach sanitizer is available in the sushi prep area.
-The walk-in cooler is organized and has raw foods below ready to eat foods. The fan grate has been cleaned on the outside. You need to remove the grate and clean it on the inside.
-Flounder sashimi has been blocked out on the menu.
-The handsink has not been replaced, but the hot water tap has been fixed. If this issue is coded again, you will be issued a violation ticket.
