All coolers at or under 4 deg C.
All freezers under -18 deg C.
No hot holding was used at time of inspections. Ensure temperature logs are kept to ensure temperatures of hot holding units can maintain at least 60 deg C.
Lower level storage area coolers all under 4 deg C / storage area freezers all under -18 deg C.
Dishwasher achieved at least 71 deg C at the dish as per thermolabel
Sanitizer solution achieved 200 ppm QUATS
