Observation: Central prep cooler (2 units side by side) have broken door seals. Mould and food debris was found in the door seals.

Observation: Prep cooler by the walk-in cooler unit was reading -4C. Actual temperature ranged from 2C to 4C.
Corrective Action(s): Ensure cooler units are equipped with accurate thermometers to facilitate temperature monitoring and to verify cold holding units are functioning at 4C or less at all times.

Comments

-Walk-in cooler was at 4C; Walk-in freezer was at -17C.
-Dessert display coolers were both less than 4C.
-Bakery prep coolers were less than 4C.
-Customer area cooler was at 4C.
-Customer area freezers were less than -18C.
-Temperatures are checked and recorded daily.
-Cleaning and sanitizing carried out in 3 compartment sink. Quats sanitizer dispenser was tested at 200ppm.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottle properly labelled and tested at 200ppm.
-Bulk bunks properly protected from potential customer contamination.
-Foods properly stored off the floor and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
