301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Observed the following:
1. High temperature dishwaser was not maintained in sanitary condition. Top of the mechanical door that moves was caked with solidified oil and other debris. Surfaces were not maintained in sanitary conditions.
2. Cooler and freezer door handles throughout the kitchen were not maintained in sanitary conditions. Door handles had food debris and grease on them.
Corrective Action(s): Required operator to clean and sanitize the mentioned above. Ensure to perform regular cleaning to maintain sanitary condtions at all times.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Hand washing station in the corner at the Western end did not have hand soap and paper towel. Staff indicated that the hand washing sink was broken but when checked, it was working.
Corrective Action(s): Required staff to replenish the hand soap and paper towel. Staff refilled both at the time of inspection

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Floor/water drain in front of the cooled room near the dishwasher was filled with food debris. This would be an ideal location for pests to harbour and nest.
Corrective Action(s): Required operator to clean out the drain and flush the drain with sanitizer and water.

Kitchen is divided into two areas; Western and Asian
Western:
-Overall sanitation satisfactory
-One hand washing station stocked with liquid soap and paper towel
-Hot and cold running water available at all sinks
-QUAT sanitizer bottles available; detected 200 ppm of QUAT
-Meat slicers maintained in sanitary conditions
-All coolers at 4 C or lower; all freezers at -18 C or lower
-Three compartment sinks available for manual warewashing; QUAT dispenser in good working order. Detected 200 ppm of QUAT
-Ice machine maintained in sanitary condition
-No sign of pests noted in the area at the time of inspection

Asian:
-Hand washing stations stocked with liquid soap and paper towel
-Hot and cold running water available at all sinks
-Hot holding units at 60 C or higher; some areas in the hot holding unit were above 60 C but some areas were slightly below 60 C. Top of the food were less than 60 C. The hot holding units use hot water to heat the food pans but the water level was not high enough to maintain the foods at 60 C at some places. Ensure the water level is high enough so that the hot water is in direct contact with the food pans.
-All coolers at 4 C or lower; all freezers at -18 C or lower
-High temperature dishwasher in good working order; detected 74.6 C at plate level after final rinse cycle
-Three compartment sink available for items that do not fit in the dishwasher
-Fan hood maintained in sanitary condition.
-All cold/hot potentially hazardous foods were kept in adequate temperature settings; cold PHFs in either coolers and/or freezers, hot PHFs in hot holding units.
-No sign of pests noted in the area at the time of inspection
