Observation (CORRECTED DURING INSPECTION): Shredded chicken and cooked beef found stored at 24-28 degrees C. According to the food handler onsite, these items were transferred directly from the cooler to food warmer.
Corrective Action(s): Previously cooked and cooled items must be re-heated to at least 74 C using stove top or oven before transferring to hot holding units. Altertately, the items can be cooked directly from their refrigerated state. Do not use the hot holding units to reheat the food.
Ensure water level in the warmers is slightly below the pans to allow proper hot holding.

* No chlorine test strips available to monitor sanitizer in the dishwasher and barwasher. Quats sanitizer strips can only be used for testing quats sanitizer solution.
Ensure chlorine test strips are available to test for dishwasher and bar washer chlorine levels. Record sanitizer concentrations daily.

* Ensure all spray bottles of cleaners and sanitizers are accurately labelled.
* Temperature logs are not up to date. No sanitizer logs kept. Must be recorded daily.

All of the items identified in the initial inspection report have been addressed. good.
