Previously noted infractions were all corrected:
- Dishwasher was functioning properly: 50ppm Cl detected after the final rinse cycle. A daily dishwasher log was available to check the Chlorine concentration. Continue with the practice.
- The floor underneath the 2 prep counter (shaved ice topping area) were cleaned. However, still noticing a small area with stuck food debris underneath the one of the prep cooler (with no wheels). Pressure washing/scraping may be required in the future. Daily cleaning is the key to prevent accumulation of food debris.
- Ensure to prepare a bleach water solution in a bucket (ice cream container or equivalent) at 100ppm Cl to store unused rags both in the kitchen, front bar, and the dining area. Prepare and change the solution as needed to ensure 100ppm Cl is detected at all time.
