Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Seafood cooler (drawers) on cookline observed at 9+ C. All drawers in this unit similar. This was an observation from previous inspection.
Correction: Plan for fix replacement. As interim measure make sure all inserts are supplemented with ice at levels and frequencies that will keep the food below 4C at all times. Shuffling cooler useage with other coolers may help reduce the burden of temperature control as discussed. Review at follow up inspection date noted.
Comments

Front right prep cooler along cookline at 4 C on right side drawers. 7 C on left side (checked smoked salmon and feta). Chef will monitor for trends in temperatures and adjust food storage accordingly. Chef will add ice to unit to help with temperatures. Also, food in this unit is shuffled to different coolers between rushes and to serve different food types with breakfast, lunch and dinner services. Temperatures, time and food types closely monitored throughout this process of moving foods between coolers. This level of oversight and specific food monitoring practices should work until long-term solution found.
