Observation (CORRECTED DURING INSPECTION): Operator informed that kitchen utensils and equipment are washed using detergent and water only.
Corrective Action(s): Educated staff on proper manual warewashing using 3 compartment sink. All equipment are washed, rinsed, sanitized, and air dried. Provided staff manual warewashing poster.

Observation: Built-up of food debris observed to be underneath stand-up cooler/freezer and worktables.

Observed grease build-up on exhaust hood vent. Last professional service cleaning indicated on 2022/12/17. THIS IS A REPEAT VIOLATION. Pictures taken.
Corrective Action(s): Clean and sanitize the aformentioned areas. Daily cleaning and sanitizing underneath hard to reach areas should be conducted to prevent possible pest harbourage. Corrected by: March 22, 2023.

Routine Inspection conducted today.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
Chlorine sanitizer bottle measured at 200ppm. 3-compartment sink available for manual warewashing.
Donair meats undergo secondary cook step prior to service.
All hot-holding units measured at 60C or higher.
Stand-up cooler and prep cooler measured at 4C or lower. Stand-up freezer measured at -18C.

No signs of pests observed.

NOTE: Purchase drain plugs for 3-compartment sink to ensure proper warewashing. Corrected by: Today.
Ensure valid FOODSAFE Level 1 certification is available upon inspector request.
