Observation (CORRECTED DURING INSPECTION): Sanitizer was not prepared before the start of food prep.
Corrective Action(s): Sanitizer must always be available in either a spray bottle or in a bucket. This is to ensure food contact surfaces can always be wiped down and sanitized.
Staff said they don't have spray bottles at the moment. A bucket of sanitizer has been filled.

Observation (CORRECTED DURING INSPECTION): Paper towel not available at handwashing station at the three compartment sink.
Corrective Action(s): Refilled paper towel. Please ensure handwashing station is always equipped with hot and cold running water, liquid soap, and paper towels.

Observation: 1. Handwashing station by the register/behind the hot holding unit not working.
2. Walk in cooler ambient temperature measure 5-6C. Raw chicken probed at 5.5C.
Corrective Action(s): 1. Handwashing station must be fixed and fully equipped at all times.
2. Please service walk in cooler.

Comments

- Handwashing station fully equipped after correction.
- No chest freezer at the moment. They will acquire one later on if they want to fry frozen foods.
>>> Shipment 3 times a week and keeping in walk in fridge.
- No cooler in the food prep area. They were only keeping sauces.
>>>Relying only on the walk in cooler.
- Hot holding unit measure 60C and greater
- QUAT sanitizer measure 200ppm at dispenser
- Three compartment sink available for manual dish washing
- No signs of pests.
- Temperature log is maintained daily, temperature checked twice a day for hot foods.

- Please track temperatures of the walk in cooler. Document temperatures twice a day to ensure cooler is 4C or below.
