Observation (CORRECTED DURING INSPECTION): Fried chicken stored in the stand-up cooler measured with an internal food product temperature of 8C. The chicken was stored in the cooler for less than 2 hours. Stand-up cooler measured with an ambient air temperature of 10C.
Corrective Action(s): Fried chicken was moved to the walk-in cooler. Do not store any potentially hazaroud food in the stand-up cooler until it is able to maintain an ambient air temperature of 4C or less.
