301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Meat grinders were very dirty and full of meat debris.
Corrective Action(s): Staff initiated the cleaning and sanitizing process at the time of inspection. Ensure meat grinders/slicers are cleaned and sanitized after each use or every 2 hours if continuously used.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) All food contact counters were visibly dirty.
2) Dirty wash cloths were left on counters.
3) Dirty knives were stored on the knife stand for re-use.
4) A very strong solution of bleach was being used to sanitize counters.
Corrective Action(s): Staff initiated cleaning of the whole facility at the time of inspection. The bleach solution was diluted to come to about 200 ppm chlorine residual. This is a repeat violation. Ensure routine cleaning and sanitation occurs to maintain food safety.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): The hand sink contained a plastic container in the basin. It was not accessible for handwashing.
Corrective Action(s): The container was removed at the time of inspection. This is a repeat violation. Ensure the hand sink is always available for staff to wash their hands.

209 - Food not protected from contamination [s. 12(a)]
Observation: Large bags of dried lemons and other whole spices were stored on the floor.
Corrective Action(s): Food should be stored at least 6" off the floor to protect from contamination. This is a repeat violation.

212 - Operator has not provided acceptable written food handling procedures [s. 23]
Observation: A meat oven/roasting unit has been added to cook meat. This facility is not permitted to cook food. The facility is only approved to handle raw meats.
Corrective Action(s): Stopped the use of the oven immediately. Further enforcement action will be taken if food is prepared in this facility without obtaining a permit. Information provided for how to obtain a permit. An updated Food Safety Plan must be submitted as well as copies of Food Safe level 1 certifications.

Observation: Bleach sanitizer was stored in a windex cleaner bottle and was being used to spray down food counters.
Corrective Action(s): Label the bottles appropriately so they cannot be accidently mixed. This is a repeat violation. Date to be corrected by: TODAY

Routine inspection conducted.

Temperatures:
- Meat coolers (2) were holding meat at 4C or below
- Walk-in cooler was at 4C
- Display coolers (2) were maintaining an ambient temperature of 4C or less
- Display freezers (2) were at -18C
The cooling units had accurate thermometers available.

Sanitation:
- Hand washing stations were adequately equipped with hot/cold running water, liquid soap, and disposable paper towels.
- 2 compartment sink was equipped with plugs.

NOTE: Re-organize the storage areas at the back of the facility or extra storage may be needed to facilitate safe food handling.
- No signs of pest activity noted at the time of inspection.

THIS IS A REPEAT VIOLATION: a copy of the COVID-19 safety plan MUST be available on site. Maximum occupancy signs must be posted at the front entrance. Refer to BCCDC or WorkSafe BC website for COVID-19 safety signs.
