Observation: "Pass through" cooler is maintaining temperatures of 7C. No perishable foods were stored in this cooler at the time of inspection.
Corrective Action(s): Repair this cooler so it is able to maintain 4C. Temperature need to be able to drop to 4C quickly after heavy use (within 30 mins). Date to be completed by: October 23, 2018

- Hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers (walk-in, display) at < or = 4C
- Walk-in freezer at < or = -18C
- High temperature dishwasher in use. Final rinse temperature reached 80.6C at the plate level.
- 200 ppm Quat sanitizer available in buckets with wiping cloths
- Meat slicer is well-maintained. Cleaning and sanitizing is performed after each use.
- Temperature logs for coolers, freezers, hot foods are available and maintained regularly
- No signs of pests observed during inspection. Rentokil provides pest control services.
