Observation: Right side prep cooler temperature 9 C inside and 10 C in some inserts. A couple of the foods were at 4 C. Unit might be on defrost cycle. Keep temperature records on this unit (as you should for all the coolers) to ensure it is maintaining food at 4 C or less at all times.

Corrective Action(s): Keep temperature logs/records of this unit (as you should for all the coolers) to ensure it is maintaining food at 4 C or less at all times. If unit is not keeping 4 C or less remove or supplement the potentially hazardous foods with ice and move product out at end of day until unit is repaired or serviced.
**Freezer is not working and service technician will be in later today. Have technician look at and service if necessary the prep cooler too.

Quats in sani-buckets and at sink good (200 ppm).
left side prep cooler good (less than 4 C).
Hot holding above 60 C.
Handwash stations all stocked.
Premises looks clean and organized.
Temperature of freezer was around -7 C. Minimize access to this unit until repaired to ensure any remaining food stays out of the danger zone.
Make sure the cooler is looked at in addition to the freezer by service tech and fixed as necessary.
