Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Cutting boards and food prep tables throughout the kitchen are soiled with food debris/residues and debris.
Correction: Thoroughly clean and sanitize all surfaces in the kitchen (eg. countertops, cutting boards, shelves, etc.)
Ensure all surfaces are frequently cleaned and sanitized to prevent accumulation of soil and debris.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Soiled rags containing food particles & residues observed at food preparation areas in the kitchen. Soiled rags are being used to wipe cutting boards and prep surfaces in the kitchen without use of cleaning/sanitizing chemicals.
Correction: Provide cleaning and sanitizing solutions to all food prep stations in the kitchen.
Train all employees on the proper methods for cleaning and sanitizing surfaces.
Ensure cleaning and sanitizing solutions are used by food handlers to maintain their work areas.

Follow-up inspection to confirm completion of correction requirements and rescind closure order (issued Nov.22, 2022):
-Sanitation of food premises is significantly improved.
-Chlorine sanitizer pails are available at multiple locations in the kitchen for holding clean wiping rags (~200ppm chlorine concentration)
-Pest control visit scheduled for later this afternoon to assess and treat the food premises for pests (cockroaches, rodents)
-Hand-sink is clear of obstructions

The following items must be completed:
1) Obtain a long-handled brush for scrubbing the hard-to reach areas underneath the cooking line. This area must be cleaned regularly (eg. weekly)
2) Provide a copy of the service invoice from the pest control company (Lower Mainland pest control) with descriptions of what services were performed and recommendations
3) Ensure to comply with any/all recommendations from the pest control technician to eliminate pest activity and prevent future activity
4) Update the sanitation plan for the food premises and establish a regular schedule for thorough cleaning of all sections of the restaurant
