Observation (CORRECTED DURING INSPECTION): 2 pots of soup on stove burners from previous day.
Corrective Action(s): Product discarded.

To prevent microbial growth cooked potentially hazardous foods must be kept hot at 60 C or warmer.

Upon closing leftover soup product is to be discarded.

Observation: Dough mixer has food debris remaining on surfaces - flour and dried dough build-up on surfaces of mixer attachment.
Corrective Action(s): Dough mixer is to be fully disassembled after use. Parts are to be removed and cleaned and sanitized through the dishwasher. Surfaces of equipment are to be cleaned and sanitized in place.

Observation: New cooler unit installed in dry storage area, dry storage shelving removed and inventory of food items stored on the floor.

Food items in cooler units and walk-in freezer observed stored without covers.

Raw meats stored beside vegetable products on cooler shelves.

Waste oil and waste organic containers stored in dry storage area with food inventory.
Corrective Action(s): Food items / food containers are to be stored off the floor. Foods should be placed on shelves that provide 6” clearance from the floor.

Raw meats and eggs are to be stored below and away from contacting potentially ready to eat food items.

Food items / food containers when stored are to be properly covered to protect from contamination using fitted lids or single use plastic wrap / metal foil.

Do not store waste containers in food storage areas.

New bar prep cooler - top work surface, metal is heavily pitted and interior insulation is visible.

New upright cooler in dry storage room, temp 6 C
Corrective Action(s): Repair / adjust cooler units to maintain food at 4 C or colder.

Provide intact, cleanable surface for bar prep cooler.

Provide thermometers inside each cooler to monitor temperature.
