Observation: Dishwasher does not have a final sanitizing rinse. Low temp dishwasher final rinse 0 ppm chlorine detected after several runs of machine
Correction: Immediately make sure that all dishes and utensils are washed, rinsed, sanitized, and air dried. Use 200 ppm quats sanitizer is sink to sanitize. Use dishwasher to sanitized only when it can provide a 50ppm chlorine final sanitizing rinse. Date to be corrected by Immediately

Follow up inspection.
- Dishwasher now has a final sanitizing rinse. 100ppm chlorine detected after final rinse (50ppm minimum required). Test strips available.
- The prep cooler is being defrosted to remove ice buildup. Food is stored in walk in cooler while defrosting.
- See above re pest control and use of chemicals.
