302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bleach sanitizer in pail in kitchen measured at 0 ppm chlorine concentration. Bleach sanitizer in spray bottle (X1) measured at >> 200 ppm chlorine concentration. Staff prepared fresh and diluted sanitizer duringi inspection which measured at 200 ppm chlorine concentration in both the pail and spray bottle.
Corrective Action(s): Prepare bleach sanitizer (as per approved sanitation plan) at a concentration of 200 ppm by mixing 1/2-1 teaspoon of bleach with 1L of water. Obtain chlorine test strips to verify sanitizer strength is adequate for sanitizing food contact surfaces and equipment throughout the day.

304 - Premises not free of pests [s. 26(a)]
Observation: More than 10 fruit/drain flies observed on site during inspection. Professional pest control company is contracted and multiple traps are observed in place in non-food preparation areas (UV lights and sticky fly traps). Operator stated that the pest control company also applied treatment to the drains in the last week.
Corrective Action(s): Monitor fruit/drain fly population and contact pest control company to re-assess and apply treatment if population of flies remains the same or increases over the next week. Keep all food covered and stored at least 6 inches off the floor to prevent food contamination and to prevent harbouring/breeding of flies.

Observation:
1. Some food debris build-up observed in the following areas:
- All floors around and behind the beverage preparation station

2. Ventilation canopy observed with grease build-up. Maintenance cleaning was due in Sept 2023.
Corrective Action(s): Degrease, clean and sanitize the aforementioned areas to remove grease and food debris and to prevent pest entry/harbourage/breeding on site.

Routine Inspection Conducted

Observations:
- Walk-in cooler at 3'C
- Walk-in freezer at -20'C
- Bar coolers at or below 4'C (*Note: door on under-counter bar cooler has been repaired since last inspection and is able to maintain an adequate seal and a temperature of 4'C)
- No hot-holding observed during inspection
- General organization in walk-in cooler is good
- All food observed stored covered and at least 6 inches off the floor
- Raw meat stored away from ready-to-eat foods
- Chemicals are stored away from food
- First-in-first-out method in use. Food containers are labelled with dates foods are prepared.
- Professional pest control company is contracted
- General sanitation has improved since last routine inspection. Still some improvement required
- All hand washing stations are adequately supplied with hot and cold running water, liquid soap and paper towel
- Chemical dishwasher measured at 100 ppm chlorine residual at the plate surface
- Ice machine observed in sanitary condition with scoop placed outside the machine
- Equipment observed stored in a sanitary manner
- Public washrooms, also used by staff, are maintained in a sanitary condition
- FOODSAFE Level 1 trained operator is available on site
- Permit posted in a conspicuous location on site
- Staff observed wearing gloves during food preparation/handlings

*Reminders:
- Single-use containers must not be used more than one. Do not store these containers of food directly on top of other food in the sandwich cooler inserts.
- Knives must be stored on a knife magnet or in another manner which maintains the knives in a sanitary manner. Knives must not be stored between equipment.
- Glove use is NOT a replacement for proper, frequent handwashing. Ensure staff are washing their hands at adequate frequencies to prevent contamination of food.

Overall, major improvements noted in regards to food storage practices and sanitation. Good job!
