Observation: The raw wood platform, beneath the compressor press, requires to be sealed, to all the wood to be cleaned; and to prevent food absorption. Seal or paint all surfaces of the wood platform.

Routine inspection conducted due to ownership changes:
- Coolers 4C or colder; freezers -10C or colder; thermometers present; and temp. recorded daily.
- Installation of a blast freezer is occurring.
- Hand sink stocked with liquid soap, paper towels and running hot + cold water.
- Bleach sanitizer had [cl2] of 220ppm.
- General sanitation level adequate. Commercial exhaust hood professionally cleaned Jan.2021.
- No signs of pests.
- All foods stored in food grade containers; covered; labelled; date coded; and stored 6" off the floor.
- No expired foods in use.
- Approval to operate granted
- COVID-19 measures in place.
