Observation: 1. When using the display prep coolers, keep lids closed as much as possible and keep potentially hazardous foods at 4C or colder.
2. Two door prep cooler - repair doors so that doors close properly. Coolers to be working properly.
3. Provide theremometrs for all coolers and check/record daily.
4. Manager with Foodsafe Level 1 is not available onsite. Maanger onsite (Operator) must have Foodsafe Level 1.
5. Provide drain racks for drying utensils. Post instruction for hot holding - today.
