Observation: Cockroaches observed throughout the facility. The staff stated that the pest control company will inspect next week.
Corrective Action(s): Immediately contact the pest control company. The following actions must be taken:
- locate where the pest is originating from
- pest control measures must be taken. All food items must be adequately covered or removed from the kitchen during this process.
- eliminate all breeding/harbouring sites
- eliminate all sources of food
- eliminate moisture buildup

Comments

- General sanitation is good.
- All handwashing stations (front/back) supplied with cold/hot running water, soap, and paper towels.
- Surface sanitizer available in designated buckets with presoaked wiping cloths at 200ppm QUAT concentration.
- High temperature dishwasher achieved 72C at the plate's level during the final rinse cycle.
- Two compartment sink available for manual dishwashing. Sanitizer available at 200ppm QUAT concentration.
- Dry storage area has adequate space and wire racks. Dry food items must be stored min 15cm (6inches) off the floor.
- FOODSAFE certified staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers: < or = 4C
- All freezers: < or = -18C
- Thermometers available in all coolers and freezers.
- Daily temperature logs must be kept on site and up to date.
