- Cooler ambient air temperature below 4 degree Celsius
- 50 ppm Cl available in the glass washer

- Hand washing stations were found to have hot/cold running water, liquid soap and paper towel
- All coolers ambient air temperature found at 4c or below. Close the prep cooler lids after making orders.
- All freezers ambient air temperature found at -18c or below.
- All hot holding units were found at 60 c or higher.
- Dishwasher reached 50 ppm concentration for sanitizer cycle.
- Quat sanitizers were at 200 ppm concentration. Remind staff to change sanitizer regularly as per your sanitation plan.
