Observation (CORRECTED DURING INSPECTION): Quat sanitizer found at 50ppm concentration in sanitizer buckets throughout kitchen facility.
Corrective Action(s): Operator prepared new quat sanitizer in buckets that reached 200ppm concentration. Sanitizer solution at dispensing unit reached 200ppm concentration.

All sanitizer solutions must be at 200ppm concentration for quat sanitizer solution.

RECOMMENDATION: Keep a daily log of sanitizer and ensure the dispensing unit reaches atleast 200ppm concentration.

Comments

Routine inspection.
Handwashing stations are equipped with hot/cold running water, liquid soap and paper towels.
All coolers found at 4c or below and equipped with thermometers.
Freezer at -18c.
Hot holding- Curry found at 60c.
Temperature logs are available onsite.
Dishwasher found at 71.8c at dish level for rinse cycle.
All foods are being stored off the floor.
All bulk foods are being stored in containers with tightly sealed lids.
Dry storage areas are in good sanitary condition.
Employees observed to be wearing proper protective wear (aprons, hair restraints etc.)
Employees are foodsafe certified.
Overall sanitation is adequate.

The following requires operator's attention:
1. see above noted violations
2. Utensils in dining room should be protected from contamination. Wrap all utensils or only set tables prior to dining time. Do not preset the tables in advance.
3. Place a garbage receptable next to handwashing station near dishwashing area.
