Food Handler Hygiene
o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
o Operators had clean clothing for food preparation and were wearing hair nets
-Washrooms for staff/public are clean and fully supplied for hand hygiene

Storage Temperatures
o Cold holding Coolers are below 4C
-Some vegetable items are 12C after lunch rush - please ensure to keep these covered so they stay at or below 4C, when it is not busy
o Cold holding Freezers are below -18C
o Hot holding food items are at 60C or higher

Food Processing and Food Protection
o Cooling - Temperatures are being monitored by digital reading on coolers
-Cones of raw meat are stored in the coolers below 4C; thawing occurs in the walk in cooler or other coolers.
o Specialized Food Processing (donair meats) - secondary cook step on grill is being followed for meats cut off the cone.
o Food Storage - Food is stored in covered containers.
-Raw meats are stored on the lowest shelf; Coolers are organized to prevent cross contamination

Maintenance and Sanitation
o 3 Compartment Sink dishwashing - 0ppm sanitizer in sink but this was not used during the inspection; operator turned on dispenser from the wall and this reads 200ppm Quats. Be sure to drain sink and refill with fresh sanitizer when used for sanitizing again after dinner rush
o Sanitizer bottles - have 200ppm Quats
-Storage of chemicals is separate and away from food
o Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
o Pest control - there are no signs of pests at the time of inspection.
