Observation (CORRECTED DURING INSPECTION): One of the food products (snacks) were stored in garbage bag.
Corrective Action(s): Ensure that food is stored in a food grade container. Garbage bags are not considered as food grade and can release chemicals resulting in food contamination. Food was discarded at the time of inspection.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): 1) All the dishes after being washed and sanitized were stored in mop sink for air drying. The mop sink was observed to be filthy and is not considered as a sanitary area for storing clean dishes/utensils.
2) Multiple food containers had scoops left inside them with handle part not clean.
Corrective Action(s): Ensure that all the clean dishes/utensils are stored in a manner that prevents the risk of contamination.
1)The dishes were removed at the time of inspection and placed in 3-compartment sink for re-washing and sanitizing.
2) Either store scoops outside the container in a sanitary manner or store them with handle part up. Scoops were removed at the time of inspection

Observation (CORRECTED DURING INSPECTION): Multiple cutting boards had cuts, stained and worn out.
Corrective Action(s): Ensure that food contact surfaces are smooth to prevent any bacterial growth on them. Staff discarded two cutting boards at the time of inspection.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Facility has two floors. Pizza is prepared at ground floor and second kitchen for cooking Indian food located at 1st floor.

Temperature:
- Walk-in cooler maintained at 3C.
- Pizza prep cooler at 4C.
- Front prep cooler at 3C.
- Under counter pop cooler at 3C.
- Display coolers (x2) for sweets between 4-6C.
- Stand-up freezer at -14C.
- Stand-up cooler (pop & salads) at 3C.
- No hot holding at the time of inspection.
- Chest freezers (x3) between -16 to -22C.
- Walk-in cooler (kitchen) at 2C.
- Cooler (kitchen) at 3C.
- Temperature logs were maintained but were not found up to date.
** It is advised to record and maintain daily temperature logs for all the refrigeration units.

Hygiene and Sanitizing:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels on both floors.
- 3-compartment dishwashing sink (x2) available on both floors.
- Concentration of bleach solution noted at 200ppm.
- Sanitizer bucket was available in one kitchen and the concentration was measured >200ppm.
- Sanitizer solution for pizza prep area was prepared during inspection..
- Washroom was maintained in good sanitary condition with supply of hot/cold running water, liquid soap and single-use paper towels.

Storage:
- In pizza prep cooler, cheese was found uncovered and stored next to ham. Cheese bucket was moved at the time of inspection.
**It is recommended to store raw meat in the bottom shelves and keep the food items properly covered.
- Majority of the products were either in original packaging or covered inside coolers.
** Ensure that all the food products are stored in a manner that prevents the risk contamination.
- - All food items were stored at least 6" off the floor.
- Storage area was well-organized.

Pest Management:
- Professional pest control company conducts routine checks. Last inspection conducted on July 3rd, 2021.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate.
