203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Approximately 30 to 35L of butter sauce (1.5 pails) made the previous night was at 7C. Operator stated they used the following procedures:
-Sauce was cooked to 74C.
-Sauce was cooled in bus pans to room temperature, followed by cooling with an ice wand.
-Sauce was then transferred to 20L pails to cool.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth and/or formation of toxins. Cooling with bus pans and ice wands can be achieved using the following procedures:
-Cool sauces in bus pans (half to a third full) to room temperature.
-Use ice wands to rapidly cool foods in the bus pans in the walk-in cooler.
-Once the sauces have cooled to 4C in the bus pans, sauces may be transferred to 20L pails for storage.
Sauces were discarded at the time of inspection.

Comments

-Follow-up inspection to September 12, 2023.
-Operator has reviewed with staff proper hand hygiene. Did not observe staff wiping their hands on aprons at the time of inspection.
-Did not observe single use bags saved on-site for potential reuse at the time of inspection.
-Facility continues to have issues with cooling. Continued improper cooling will result in the issuance of violation ticket(s).
