Comments

* Do not use any staples or push pins for putting up notices on the walls to prevent risk of food contamination.
Recommended using tapes instead of staples. A stapled on 8.5 X 11 piece of paper was removed at the time of inspection.

* Entree Station: Clean the underside of the canopy for the Entree storage station to remove build up of food spills.(By March 16, 2018)
* Walk-in cooler # 5: Clean and re-attach the light cover for the ceiling light fixture. (ASAP)
* Walk-in cooler # 1: Clean/remove the moisture build up in the light fixture. (ASAP)
* Cedar Hills ECU: Clean the dirt build up on the fan cover and from the compressor area.(ASAP)

Main Kitchen:
Large Walk-in cooler below 4 degrees C.
Walk-in freezer below -18 degrees C.
All other walk-in coolers (1-6) maintained at 4 degrees or below.
Sandwich preparation cooler at 3.2 degrees C.
Main conveyor dishwasher reached 75.6 degrees C during final rinse cycle.
Under-counter dishwasher reached 74.5 degrees C during final rinse.
Quats sanitizer in the spray bottles tested 200-300 ppm.
All hand wash stations supplied with liquid soap and paper towels.
Temperature and sanitizer logs are up to date.
General sanitation is satisfactory
Dry storage room clean and well organized
No signs of pest noted during the inspection.

Upright cooler: 2.5 degree C.
Upright freezer: -16 degrees C.
Hot holding of soups> 60 degree C.
Dishwasher: 77 C at final rinse.

Maple Hills ECU:
Upright cooler below 4 degrees C.
Upright freezer below -18 C.
Dishwasher reached 74.5 degrees C at plate surface during final rinse.
Temperature logs are up to date.
General sanitation is satisfactory.
