302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. < 10 PPM chlorine residual detected at the plate level from the low temperature dish machine.
2. > 200 PPM chlorine residual (test strip bleached out) detected from the bleach sanitizer spray bottle noted in the front of house.
3. Dried on food debris noted on the meat slicer. As per operator, the meat slicer was used yesterday.
Corrective Action(s): **Issues corrected during the inspection**
1. Operator fixed the dish machine. After machine was fixed, 50 PPM chlorine residual was detected at plate level after the rinse cycle. Please use the chlorine test strips that you have available onsite to verify everyday that the dishmachine is functioning properly prior to use.
2. The sanitizer spray bottle was diluted. 200 PPM chlorine residual was detected after the dilution. Reviewed how to obtain the optimal concentration for chlorine sanitizer with the operator.
3. Staff cleaned and sanitized the meat slicer during the inspection. Going forward, after any food contact equipment is used, it must be dissassemble, clean and sanitize immediately prior to storing away. Do not leave the cleaning and sanitizing for another day.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): 1. The main switch for handwash station faucets, closest to the walk-in cooler, was turned off. No water was available from this station at the start of the inspection.
2. Paper towel was stuck in the dispenser at the front handwash station (unit closest to the bbq product hot hold unit).
3. No paper towel was available in the men’s washroom.
Corrective Action(s): **Issues corrected at the time of inspection**
1. Operator said they turned off the valve for equipment cleaning and forgot to switch on the valve for the handwash station. Valve was turned back on and hot and cold running water was available at this handwash station.
2 & 3. Operator refilled the paper towel at the stations by the bbq hot hold unit and men's washroom.

Observation: 1. Multiple containers of food stored uncovered in the walk-in cooler.
2. Improper containers (single-use bowls with no handles) were being used and stored within bulk condiment containers such as flour, corn starch, etc.
Corrective Action(s): Provide a cover/ lid/ plastic wrap for all food intended for long term storage, especially in the walk-in cooler.
2. Remove all single-use bowls and replace with proper dispensers, with handles, and store in a manner where the handles do not come into contact with food.

Observation: Debris and grease buildup noted on the floor in the following areas:
- Around the hot water tank and prep sink.
- Around the 2-compartment sink and below the dry storage rack.
- Floor below the cookline.
- Floor below the storage rack.
- Sink basins.
Corrective Action(s): Deep clean and sanitize the abovementioned areas. After performing the deep clean, maintain the cleanliness as per your Sanitation Plan.

Observation: 1. Water was not draining from the front handwash station (unit closest to the bbq product hot hold unit).
2. Leaking noted on the faucets at the handwash station closest to the walk-in cooler and at dish sink sprayer by the dishwasher.
Corrective Action(s): Repair the drain and leak noted from the sinks.

Routine inspection conducted today:
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Food stored in the proper storage hierarchy.
Rice in the rice cooker and BBQ products in the hot hold unit were noted with internal temperature above 60.0C.
No signs of pest activities noted during the inspection.
Operator has a valid FOODSAFE level 1 certificate - expires April 1, 2024.
