Observation: Bulk bags of cooking oats observed stored on the floor in the kitchen.
Corrective Action(s): Ensure to store bags of food in food grade containers or on dedicated shelving. The floor is contaminated. Correction required today.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: General cleaning in kitchen such as the walk in cooler floor, ceiling where paint is falling off and near exhaust fans where dust is building up. Cleaning will prevent contamination of food, mould growth and attraction of pests.
Corrective Action(s): Apply cleaning and repair as needed to maintain a sanitary kitchen. Cleaning required in 2 weeks. Repairs as needed and ongoing.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Dishwasher was undergoing upgrade at the time of inspection during lunch service. No dishwashing was available. (CORRECTED AT THE TIME OF INSPECTION)
2. Men's hand sink did not have running water.
Corrective Action(s): 1. New dishwasher was installed at the time of inspection and sanitizing adequately.
2. Repair required for this hand sink. Washroom now closed for repair and another washroom on premise is used. Repair required in two days.

Premise is sanitary. No signs of pests at the time of inspection.
Hot and cold water available.
Kitchen hand sink have paper towels, liquid soap and hot and cold running water.
Washrooms in use have fully stocked hand sinks.
200 ppm quat sanitizer in use in spray bottles and sani buckets.
Food in general protected from contamination in food grade containers.
New lights are constructed of shatter proof material.
New dishwasher final rinse at the plate at 74.5C as per min/max probe.
Ice machine is sanitary with dedicated scoop.
Temperature monitoring of holding units with logs in use. - good.
Permit on display in visible location.

Holding units:

Freezers: buns -17.2C, prepared meat -20.6C, white bread -16.6C,
chest -19.4C bread, green peas -17.5C, english muffins -19.6C,
frozen baking bananas and raw chicken -20C
NOTE: The frozen baking bananas may be contaminated being stored next to raw chicken. Ensure to cook fully before serving.
RECOMMENDATION: Store baking bananas in different freezer away from raw protein.

Coolers: Walk in cooler 3.2C soup, nighshift reserves 3.5C cheese, service cooler at 4C ham, waffle cooler at 4C
Front display unit at 20.6C, not in use but is on.

Hot holding unit: Soups at 59.6C.
