Routine Inspection:
- Hand washing stations (except in washroom - see violation above) fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers maintained at or below 4 degrees Celsius.
Freezers maintained at or below -18 degrees Celsius.
Hot holding maintained above 60 degrees Celsius.
- QUATS (in spray bottle) = 200 ppm.
- Bleach sanitizer (in spray bottle) = 200 ppm.
- Pest control in place.
- No indication of pest activity at the time of inspection.
- General sanitation satisfactory at time of inspection. Ensure to keep up with your daily, weekly, monthly and seasonal cleaning. The results are showing!
- Remember that donair and shawarma require a secondary cook step after being sliced off the cone. Meat is to be cooked to an internal temperature of 74C, then placed into hot holding at or above 60C.
